What temperature should a refrigerator be?

What temperature should a refrigerator be is a food-safety question before it is a repair question. The FDA cold-food guidance uses 40°F or below for the refrigerator and 0°F for the freezer. What should a refrigerator temperature be, what should the temperature of a refrigerator be, and what is the normal temperature for a refrigerator are that same pair of numbers. A normal refrigerator temperature is not "as cold as the dial will go." Food that freezes in the fresh-food section is too cold. That problem is refrigerator freezing food.

Put the thermometer in a glass of water on a middle shelf, not in the door.

What temperature should a refrigerator be set at

What temperature should a refrigerator be set at, what temperature should a refrigerator be at, and what temperature should a refrigerator be set to all depend on the control in your manual. Some dials use numbers with no degrees. Set the control, close the doors, and read a thermometer several hours later. Put an appliance thermometer in a glass of water on a middle shelf, not in the door bins. Put a second thermometer between packages in the freezer. The door is warmer than the shelf every time someone opens it.

If the glass of water is above 40°F after that wait, the cabinet is not holding a safe temperature. Use refrigerator not cooling. Do not add refrigerant and do not open a sealed system. If the food has been above 40°F, follow the time limits on the FDA page before you worry about the shelf.

  1. Place two thermometers

Glass of water on a middle shelf. Second thermometer in the freezer, not on the door.

  2. Wait with the doors shut

Several hours. A new refrigerator can take up to 24 hours.

  3. Compare with 40°F and 0°F

Those are the FDA figures. Adjust one step on the control the manual prints, then measure again.

  4. Stop if the cabinet will not hold the target

Warm means the not-cooling guide. Frozen lettuce means the freezing-food guide. No refrigerant.

Questions readers ask

Is 37°F on the display enough?

Only if a thermometer in a glass of water on a middle shelf agrees after the doors have stayed shut. The display is not the food.

What temperature should a refrigerator be set to if the dial has numbers and no degrees?

Use the manual's recommended starting number, then confirm with a thermometer against 40°F and 0°F. The number on the dial is not a Fahrenheit reading.

Should the freezer be set colder than 0°F for ice cream?

The FDA freezer target is 0°F. Colder is not required for safety. If the fresh food starts to freeze, the cabinet is too cold. Use the freezing-food guide.

Does cleaning the shelves change the temperature?

Washing shelves does not set the temperature. A full clean is a separate guide. Measure again after the doors have been shut.
